Monster Eyes Deviled Eggs

Halloween is fast approaching, and many are busy planning their festive gatherings. Why not add a spooky twist with these Monster Eyes Deviled Eggs? This delightful, healthy, and easy-to-make snack will be a hit at your Halloween party. Your guests will adore the creative presentation just as much as the tasty flavor!

Ingredients:

  • 1 dozen hardboiled eggs
  • 2 avocados
  • Salt
  • Pepper
  • Green and red food coloring
  • 1 tablespoon vinegar
  • 1 cup hot water
  • Hot sauce (optional)
  • 1 can black olives

Instructions:

*Steps 1-4 are optional.*

  1. In a mixing bowl, combine hot water, 10-12 drops of green food coloring, and vinegar.
  2. Gently crack each hardboiled egg by rolling it on the counter and pressing down lightly.
  3. Submerge the cracked eggs in the green food coloring water for 3-4 minutes.
  4. Remove the eggs and let them dry in the egg carton or on paper towels.
  5. Once dry, peel the eggs and slice them in half.
  6. Gently remove and discard the yolks from the egg halves.
  7. Using a toothpick, create red wavy lines on the cut-side of each egg half to mimic a bloodshot effect.
  8. Slice the avocados in half, remove the pits, and scoop the flesh into a medium mixing bowl.
  9. Add a pinch of salt and pepper, and mix thoroughly.
  10. If you like it spicy, feel free to add a few drops of hot sauce (optional).
  11. Fill the avocado mixture into the egg halves with a spoon.
  12. Top each filled egg with a black olive to complete the monster eye look.

  3. Crack the hardboiled eggs by rolling them and pressing down gently.
  4. Place cracked eggs in the green water for 3-4 minutes.
  5. Remove eggs from colored water and let them dry.
  6. Once dry, peel and slice the eggs in half.
  7. Discard the yolks from each half.
  8. Draw red wavy lines on the cut side of each half with a toothpick for a bloodshot look.
  9. Halve the avocados, pit them, and scoop the insides into a bowl.
  10. Mix in salt and pepper to taste.
  11. Add hot sauce if you prefer a bit of heat (optional).
  12. Fill the egg halves with the avocado mixture.
