Easter Bunny Butt Cookies

With Easter approaching, my kids are eager for some bunny-themed treats!

These delightful sugar cookies are charmingly stacked to resemble the Easter Bunny’s backside!

Ingredients:

  • 1-1/3 cups + 1 tablespoon all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 1/2 egg
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 375°F (190°C). In a small bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  2. In a larger bowl, cream the softened butter and sugar until the mixture is smooth. Beat in the egg and vanilla extract, then gradually mix in the dry ingredients. Roll rounded teaspoonfuls of dough into balls and place them on ungreased cookie sheets.
  3. For the bunny feet, take one full-sized cookie and divide it into four equal parts. Ensure each piece is formed into a round shape before baking.
  4. Bake for 8 to 10 minutes or until the cookies are golden. Allow them to rest on the cookie sheet for two minutes before transferring them to wire racks to cool.
  5. In a medium microwave-safe bowl, combine frosting with 1 to 3 drops of pink food coloring and mix thoroughly. Microwave uncovered for 10 to 15 seconds until the frosting is soft but not melted.
  6. To assemble the bunny butt, frost one whole cookie segment and two bunny feet. Place the bunny feet at the bottom of the cookie and add a marshmallow to the center of each for the tail. Optionally, decorate the bunny paws with candy sprinkles or additional frosting. Repeat the process with the remaining cookie segments and feet.

  6. Frost one cookie slice and two bunny feet. Attach the feet to the cookie base and place a marshmallow in the center for a tail. Decorate as desired. Repeat with the remaining slices and feet.
